Why Italian Extra Virgin Olive Oil? Because it comes from olives from controlled and carefully selected olive groves. When the olives reach maturity or veraison they are harvested and immediately pressed with cold extraction; the result is an oil with sweet tomato and bitter artichoke notes, typical of a late harvest.
