Founded in Tuscany around the 7th century, the Pieve were Christian sub-communities within the diocese but autonomous from the parishes. Among these Pieve, the Poliziano area was already cultivated with vineyards and olive groves at the time. Our priority was finding an olive grove that was a typical expression of the area: Moraiolo, Frantoio, Leccino, a healthy grove, already flourishing with the typical scents of Tuscany found in our oil. It is from one of these Pieve, formerly Badia de' Caggiolari or Badia Crepaldo, on the large farm of the Bastogi counts, once the villa of the Grand Duke of Tuscany, that our Toscano Montepulciano PGI extra virgin olive oil is born.

Smell: the scent is clear, like freshly mown grass, unripe tomato, artichoke leaf, dominated by a precise, very persistent fennel fragrance.

Taste: Intense, fruity and rich with decisive tones of grass, artichoke, wild thyme, a beautiful floral note, very persistent flavor of fennel. In the mouth, the oil is elegant and at the same time enveloping and so soft that it recalls wool. Extraordinarily balanced between bitter and spicy, it maintains great aromatic consistency with respect to the olfactory sensations.

 

Pairing dishes

This oil gives a note of character to the dish: its enveloping elegance makes it particularly suitable for all sweet vegetables, such as pumpkin, courgettes, peas, green beans, as the contrast between the sweetness of the dish and the bitter tones of the oil enhances the flavors and fragrances.
